Beyond Parsley, recently mentioned in this link. Blue Cheese Mousse
1 T. unflavored gelatin 1/4 C. water 12 oz. sour cream w/chives 1 (8 oz.) pkg cream cheese, room temperature 1 C. small curd cottage cheese 1 pkg. Good Seasons cheese-garlic salad dressing mix 4 oz. blue cheese, crumbled
Soften gelatin in water over low heat. Combine sour cream & cream cheese. Add cottage cheese & salad dressing mix. Stir in blue cheese. Add gelatin & mix well. Pour into oiled 4 cup mold. Refrigerate overnite, unmold prior to serving.
Serve w/pita bread triagnles that have been split, buttered & toasted
Surround w/black olives.
Savory Cheese Cake (This recipe freezes well & it can be halved)
1/3 C. fine bread crumbs 1/4 C. grated Parmesan cheese 3 1/2 (8oz.) pkgs cream cheese 4 large eggs 1/2 C. heavy cream 1/2 lb. bacon 1 medium onion, finely chopped 1/2 lb.blue cheese, crumbled Salt & freshly ground pepper to taste 2-3 drops Tabasco sauce
Sprinkle bread crumbs & parmesan cheese in a buttered, water tight 8 in. round springform pan. Set aside.
Combine cream cheese, eggs & cream in mixer. Saute bacon until crisp, drain & chop finely. Reserve 1 Tbl. drippings & saute onion until clear. Add onion, bacon, blue cheese, salt, pepper & Tabasco to cream cheese mixture. Pour into prepared pan. Set pan inside a larger one; pour boiling water 2 inches deep into larger pan. Bake 1 hour & 40 minutes Turn off oven & let "cake" set for 1 hr. Remove pan from water & cool 2 hours. 50 servings
This is stunning on a dark platter adorned w/leafy greens. Serve w/an assortment of crackers.

Blue Cheese Potato Salad
10 medium new potatoes 4 oz. blue cheese,crumbled 1 C. chopped celery 2 T. chopped chives
Wash potatoes(do not peel) & boil until tender. Drain, cool & cut into large pieces. Toss together w/blue cheese, celery, & chives. Blend dressing ingredients (recipe follows) & stir into potato mixture. Chill & serve. Serves 6-8 Dressing
3/4 C. sour cream 3/4 C. mayonnaise 3 T. white wine vinegar
