Here's another for you Pat (all all blue cheese lovers). If you try this recipe, please let us know how it turns out - 1 cup seems like a lot of blue cheese but it may be just right.

Wisconsin Blue Cheese Muffins Preheat oven to 400 degrees. Line or grease muffin tins.
Combine: 2 c all-purpose flour
3 T sugar 1 T baking powder 1/4 t salt 1 c crumbled blue cheese
Combine and mix into first mixture just until moistened: 1 egg, beaten 1 c milk 1/4 c melted butter
Fill prepared muffin cups 3/4 full. Bake at 400 degrees for 20-25 minutes or until golden brown.
