I've been there my friend. Here are a few breakfasts that I enjoy: 1. Make a batch of oversized muffins the night before and eat them with peanut butter (for protein) while you're on the run. You can freeze them too & defrost them in the micro. 2. Cottage cheese sprinkled with wheat germ and chopped walnuts w/ a spoonful of honey. 3. A baked sweet potato (these are delicious and filling for breakfast and full of vitamins). Cook it in the micro, cut in it half and use the skin as a "holder" while you're "on the run". 4. If you like tofu, mix it with honey and wheatgerm and puree it in the blender like a tofu softee. 5. Kefir, liquid yogurt drink.
