Here are my two favorite muffin recipes. Date Molasses Muffins with Streusel Topping 1 3/4 C. all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 3/4 C. applesauce 1/2 C. oil 1/3 C. molasses 1/3 C. milk 1 egg 3/4 C. chopped dates Heat oven to 400 degrees. Line 12 muffin cups or grease bottoms only. Lightly spoon flour into measuring cup and level off. Combine dry ingredients in large bowl. In small bowl, combine liquid ingredients, then add to dry ingredients. Stir just until moistened. Gently stir in dates. Divide evenly among muffin cups. In small bowl, combine 1/4 C. flour, 2 Tbls. Butter, 1/4 C. brown sugar and 1/4 C. walnuts. Sprinkle over muffin batter. Bake at 400 degrees for 15-20 minutes or until toothpick comes out clean. Cool 1 minute, remove from muffin cups.
Bacon & Onion Muffins 2 C. all-purpose Flour 2 tsp. baking powder 1/2 tsp. dry mustard 1/2 tsp. salt 1 egg 1 C. milk 1/4 C. vegetable oil 3/4 C. chopped green onion 1/2 C. finely chopped Canadian Bacon Preheat oven to 400 degrees. Coat 12 cup muffin pan with nonstick cooking spray. Mix together dry ingredients in large bowl. Beat egg lightly in medium bowl, beat in milk and oil. Stir in onion and bacon. Stir into dry ingredients until moistened. Spoon 1/4 C. batter into each muffin cup. Bake at 400 degrees for 16-20 minutes or until tester comes out clean and tops are lightly golden. Cool on rack 5 minutes, then turn muffins out.
