ZUCCHINI PARMESAN BREAD
For 1-1/2 lb loaf:
1/3 cup buttermilk 1-1/2 eggs 1-1/2 tablespoon butter 1=1/2 cups zucchini, diced 1/3 cup fresh parsley 1-1/2 tablespoons honey 2 teaspoons salt 2/3 teaspoon pepper 3 tablespoons Parmesan cheese, grated 1/3 cup bulgur 3/4 cup whole wheat flour 2-1/4 cups bread flour 2-1/2 teaspoons yeast
Place all ingredients in bread machine in order given in your bread machine manual. Bake according to manufacturer's directions.
This recipe is from Melissa Clark's THE BREAD MACHINE COOKBOOK - I have not made this recipe, but have made several other recipes from the book and they've been good.
I wasn't sure if you were looking for a yeasted zucchini brad or a 'quick' bread. Hope this helps.
