Lemon Zucchini Bread
1 1/2 cups flour 2 teaspoon baking powder 1/2 teaspoon salt 1/8 teaspoon nutmeg 1/8 teaspoon ground ginger
1 cup sugar 1/2 cup salad oil 2 eggs Grated peel of 1 small lemon 2 teaspoon orange juice
1 cup grated zucchini unpeeled (can be a well-rounded cup)
Mix together the first five ingredients.
In large mixing bowl, beat together the sugar, oil, eggs, lemon peel and orange juice. Add flour mixture alternately with zucchini to the sugar mixture. Blend well, do not overbeat.
Bake in prepared pan. Use greased 9 x 5 loaf pan or two smaller loaf pans – bake at 350 degrees for 40 minutes.
Cool bread 10 minutes in pan and then remove to wire rack to finish cooling.
These freeze very well.
