well, I don't think I'd substitue fresh fruit for dried but, if I did, I might use a little bit less of it. Hey, give it a shot - what the hell! But aside from eating those heavenly honies AS IS (I LOVE figs) you can find many recipes for fresh figs. Try food.epicurious.com. I think I saw a recipe for muffins with fresh figs in them, which you can double and make bread with instead. Also, fresh figs are terrific poached in brandy or sweet wine like Marsala or Sauternes and topped off with whipped cream or creme fraiche.
