Connie hi, I'm Suzanne. If it weren't for my lovely groundhog, I'd be rolling in the zucchini now too. I often make zucchini fritters.
Zucchini Fitters 1 C. flour 1 tsp. baking powder 1/2 tsp. sugar (raw or white) 3/4 tsp. salt 2 eggs 1/4 C. milk ( soy/fat-free/whatever you have) 1 1/2C. shredded zucchini oil for frying Mix dry ingredients, mix wet ingredients then mix together. Add more flour if the batter is too wet. Drop by spoonfuls into hot oil or onto greased teflon pan, then flatten. Enjoy. If your husband doesn't like veggies, the frying may curb his appetite for grease!!! Let me know how they turn out! You can also add things like tabasco, onion, scallions, black pepper, corn, green pepper or anything else you have!!black beans too...uhmmm... Suzanne
