It's so funny. I could never make potato salad either that tasted like my mom's. You're asking for one very much like the one she made also. Here is one I make that is most like her's. It may be that it just needs her touch, however she is no longer with us. Regular Potato Salad
4 c. cubed potatoes, cooked, peeled. (she always cooked them with the peelings on)
4 hard boiled eggs, chopped
3/4 c. mayonaise (she used Miracle Whip)
1/4 c. onion (she used a lot less, if the onions were strong)
1/3 c. chopped celery
1 T. yellow mustard or to taste
pickle relish (she always said a little), to taste
1/2 t. salt
1/4 t. pepper
Combine all ingredients and chill several hours.
