Penuche

3 cups brown sugar, firmly packed
1 cup milk
2 Tablespoons light corn syrup
1/8 teaspoon salt
3 Tablespoons butter
1 teaspoon vanilla

In a saucepan, mix sugar, milk, and corn syrup. Cook over low heat, stirring until sugar is fully dissolved. Then cook WITHOUT STIRRING until the mixture reaches the "soft ball stage" (238 degrees) Remove from heat.

Add butter and salt, and mix well. Allow the mixture to cool to lukewarm without any further stirring. Place in large mixing bowl, and beat on high speed until candy starts to thicken. Add vanilla and continue beating at medium speed until it is very thick and holds its shape. Pour at once into buttered 8 inch square pan and let cool. Cut into one-inch squares.
