Pine Nut Spinach Dip
1 (10 oz) package frozen, chopped spinach, thawed one quarter cup pine nuts or slivered almonds 1 medium size purple onion, chopped 2 garlic cloves, pressed one half teaspoon dry thyme 1 teaspoon olive oil 1 cup fat free cottage cheese 1 package (8-0z ) cream cheese one quarter diced ripe olives 1 tablespoon lemon juice one quarter teaspoon salt one eighth teaspoon pepper
Drain spinach well, pressing between layers of paper towels. Set aside.
Cook nuts in small nonstick skillet over medium high heat, stirring for 3 minutes. Remove form skillet and set aside.
Saute onion, garlic and thyme in hot oil in skillet for 2 minutes. Add spinach and saute 3 minutes. Process cottage cheese and cream cheese in food processor until smooth. Stir in pine nuts, onion mixture, olives and next 3 ingredients.
Chill overnight.
