Szechuan green beans? i reckon u r talking about the "dried-cooked string beans", right? here is my verison:
1 1l. string beans 1 c. oil for fring 1 oz. minced pork (optional) 2 T. presoftened dried shrimp, chopped finely (comes in pkgs in asian grocers.) 4 T. szechuan picked mustard green, chopped finely (these can be very salty, so you'd want to rinse it 1st in most cases unless you buy the shredded ones.) 1 1/2 T. chopped green onion 1/2 t. light sesame oil seasoing: 1 t. soy sauce (sometimes the mustard green is salty enough that u don't need and soy sauce at all. so be very careful w/ the amount of soy sauce you add.) 2 T. water 1 t. sugar pinch pf white pepper powder
remove the ends of th string beans and pull away any veinly strings; rinse and drain. (u don't have to do this if u use stringless beans.) cut the string beans into 3-inch lengths. heat the wok till smokining and add oil; turn off the heat. put the string beans in teh wok and turn the heat to med. fry for 4 min. remove and drain. remove the oil from the wok, leaving only 1 T. stir-fry the minced pork until it changeds color. add the shrimp and mustard greens. stir for 30 sec. return the string beans to teh wok andd add seasoning. turn the heat to high stir quickly to mix. sprinkle w/ green onion & sesame oil. serve.
