GRANDMA'S TEA CAKES
2 c. sugar 1 c. Crisco 1/2 c. buttermilk 3 eggs 1/2 tsp. soda 2 tsp. baking powder 1 tsp. vanilla 3 c. plain flour
Cream shortening, add sugar, then beaten eggs. Into 1 cup flour sift soda and baking powder; add this to sugar mixture. Add milk and vanilla, now enough flour to make soft dough. Turn onto floured board and knead until smooth. Roll about 1/4-inch thick, cut into any shapes and bake at 350 degrees until brown and done about 10 minutes. Makes about 120 tea cakes.
CINNAMON TEA CAKES Makes about 3 1/2 dozen
1 c. butter or margarine 2 1/4 c. flour 1/4 tsp. salt 1 1/2 c. confectioners sugar 1 tsp. cinnamon 1 tsp. vanilla
In large bowl, with electric mixer at medium speed, beat butter until light and fluffy. At low speed, blend in 1/2 cup sugar, flour, 1/2 teaspoon cinnamon, the salt and vanilla. Chill in refrigerator for 30 minutes. Preheat oven to 400 degrees. Grease cookie sheet. Roll dough into 1-inch balls. Bake 9 to 10 minutes or until a golden brown. Combine remaining sugar and cinnamon. Roll hot tea cakes in this mixture. Cool.
WELSH TEA CAKES
3 level c. flour 3/4 c. butter or 1 1/2 bars 3/4 c. currants 3/4 c. sugar 2 eggs 3 rounded tsp. baking powder pinch of salt
Add salt and baking powder to flour. Blend into softened butter. Add sugar and currants. Next add beaten eggs. Mix into stiff dough. Add 1/4 cup of milk if needed. Roll out 1/4-inch thick. Use small cookie cutter. Bake in electric frying pan 380 degrees. Check in 5 minutes; turn cookie over. When done, sprinkle with fine sugar while tea cakes are hot.
HOT ORANGE TEA CAKES
2 c. flour 1/4 tsp. baking soda 1/2 c. sugar grated rind of 1 large orange 1/2 c. melted butter 1/2 c. chopped pecans 1/4 c. brown sugar 2 tsp. baking powder 1 tsp. salt 2/3 c. concentrated orange juice 2 unbeaten eggs 1 Tbsp. flour 1/2 tsp. cinnamon
In a large bowl, sift dry ingredients together. Add orange juice, rind, butter, eggs and pecans; mix well and pour into well greased muffin tins. Top with mixture of 1 tablespoon flour, the brown sugar and cinnamon. Bake in 350 degrees oven for 20 minutes. Serve hot with butter. Makes 12 tea cakes
