Hazelnut Apple Pancakes

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 C Flour 1/4 C Hazelnuts -- toasted, -- finely ground Pinch Salt 2 Tsp Baking Powder 1/2 Tsp Baking Soda 1 Egg Beaters. 99% Egg Substitute -- or equiv to 1 egg 1 1/3 C Nonfat Milk -- or buttermilk 1/4 C Applesauce 1 lg Granny Smith Apple -- peel, dice 1/2 tsp Vanilla
NOTE: Recipe adjusted from the original to lower the fat content. Original recipe called for 1/3 C hazelnuts - I used 1/4 C. It also calls for 2 T butter, melted (optional), I chose to omit it or in the future to use Wonderslim instead of the butter.
NOTE: To toast hazelnutes - bake on sheetpan till golden brown and hull starts to break off. Rub hull to remove. Grind to nice fine meal.
In bowl put flour, hazelnuts, baking powder, baking soda, applesauce, egg beaters, nonfat milk, and vanilla. Stir till it comes together.
Add apple or any fruit you prefer.
Can make any size you want. When top bubbles flip them over.
Makes about 1 dozen.

HAZELNUT OATMEAL PANCAKES *

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -----BILLS20086----- 2 c Buttermilk 1 1/2 c Old fashioned oats 2 Eggs 1/2 c Flour 1 tb Sugar 1 t Baking soda 1/2 ts Salt 1/2 c Hazelnuts -- chopped, toasted Vegetable oil Maple syrup
Mix buttermilk and oats in large bowl. Let stand 5 minutes. Whisk in eggs. Mix in flour, sugar, baking soda and salt; stir in chopped hazelnuts. Heat heavy large skillet over medium-high heat. Brush with oil. Drop batter by 1/3 cupfuls into skillet, spacing apart. Cook until bubbles form on top of pancakes, about 2 minutes. Turn and cook until bottoms are golden, about 2 minutes more. Transfer to plate. Repeat with remaining batter, brushing skillet with oil as needed. Serve with maple syrup.
