5 Lb. baking potatoes 2 Pkg. (3 oz.) cream cheese (more if desired, room temp.) 1 Container (8 oz.) 1/3 less fat sour cream 1/2 Cup butter or margarine, room temperature 1/2 Cup milk 2 Tsp. onion salt Salt and pepper to taste Chopped or dried parsley for garnish
Peel potatoes and cut into cubes. Cook in boiling salted water 15-20 minutes or until tender. Drain well. Mash potatoes. Add cream cheese, sour cream, butter, milk and onion salt. Beat at medium speed with electric mixer until smooth and fluffy. Do not overbeat. Spoon in a lightly greased 9x13 pan or 3 quart baking dish. May be baked, covered at 325 deg. for 50 minutes or until thoroughly heated. Serves 8 to 10.
*Note: After combining everything, it may be chilled up to 2 days. To bake, let stand at room temperature 30 minutes before baking.
