It appears to me that you have created some wonderful family favorites. When I read your post my immediate thought was that it may be time to teach your daughter how to make these favorites herself. There have been soooo many posts on TKL from adult children asking for help with a recipe they remember their mom's used to make, but their mom's are no longer around to ask.
You need to take care of your arthritis!!!
Here is cheese straw a recipe previously posted on TKL by Diane that does not require a cookie press, but it does require rolling out the dough.
Maybe it will help you a bit, but I still vote on putting your daughter to work. Maybe she does not know how difficult this project would be for you.

Cheese Straws
1 cup grated sharp cheddar cheese 1 tbl melted butter 4 tbl cold water 1/8 tsp paprika (omit if desired) 1/8 tsp salt 1/4 tsp baking powder 1 cup flour
Combine ingredients, adding flour last. Roll into thin sheets on well floured board. Cut into strips. Bake at 400F 15-20 minutes.
