Margaret...we eat chicken very often and as much as I love it...it does get boring. Just this week I tried Chicken Cacciatore, something new for us. It turned out great and I made enough to get two meals out of it. I actually got the recipe off this board and just doctored it up to what I had in the house.
Another chicken recipe I did lately just to add a bit of different flavor was to flour and brown chicken cutlets...then add some chicken broth and white wine to drippings in pan. I then added some sun dried tomatoes and drained artichoke hearts and let it all simmer. Then I poured it over the chicken and served with noodles.
