Braised Chicken with Young Mango in Coconut Milk
1.5kg whole chicken 300g Young Mango (cut into cubes) 100g Shallots } 50g Garlic } Blend 30g Ginger } Together 20 g Tumeric 25g Crushed lemon grass 1.0 kg coconut milk 60 g red chilies (slice into 0.5 cm) salt small chilies (optional if you can't eat very spicy food)
1. Wash chicken and leave to drain 2. Hold chicken on open fore and let the skin burn for 10 minutes. Keep aside to cool. 3. Cut chicken to 10 pieces and place in big pot with blended mixture. 4. Heat pot and keep stirring the mixture 5. Once the chicken is almost cooked, pout in the rest of the mixture. KEep on stirring slowly (other wise the coconut milk may curdle when it reaches boiling point). Add in salt.
Can eat with white rice.
