This turned out really well. It disappeared pretty fast. And the bacon can be cooked the day before to save time, and the crust can be rolled out the day before, if needed, and wrapped tightly with plastic wrap. It's from "The Complete Guide to Country Cooking." I'm sure substitutions would work fine -- cooked, crumbled sausage; Canadian bacon; onions; peppers; etc. Hope you enjoy it.
Bacon and Cheese Breakfast Pizza
Pastry for single-crust pie (9-inch) 1/2 pound sliced bacon, cooked and crumbled 2 cups (8 oz.) shredded Swiss cheese 4 eggs 1 1/2 cups (12 oz.) sour cream 2 Tbsp. chopped fresh parsley
Roll pastry to fit a 12-inch pizza pan.
Bake at 425 for 5 minutes. Sprinkle bacon and cheese evenly over crust.
In a bowl, beat eggs, sour cream and parsley until smooth; pour over crust.
Bake, uncovered, for 20-25 minutes or until puffy and lightly browned.
Yield: 6 main-dish servings or 18 appetizers
