Ginger-Marinaded Beets

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound fresh beets 3 tablespoons reduced-calorie orange marmalade 1 tablespoon unsweetened apple juice 1 tablespoon lemon juice 1 teaspoon minced crystallized ginger
Leave root and 1" of stem on beets; scrub with a veg. brush. Cook beets in boiling water to cover for 30 min. or until tender. Drain. Pour cold water over beets, and drain. Trim off roots and stems and rub off skins. Cut cooked beets into 1/4" slices. Combine marmalade and remaining ingred. in a saucepan; add beets, stirring to coat. Cook over low heat until throughly heated.
