Hello Bull,
If you are talking about sugar pumpkins for pumpkin pie, this is what you do:
Cut the pie pumpkin in half, remove seeds and lay cut side down on a greased cookie sheet. Cover with foil and cook for 1 hour at 350. Remove from oven and mash the pulp and season it to make your pie.
If you are talking about pumpkin to make for soup:
You can either do the above or cut the pumpkin into chunks and par-boil to make soft. I personally prefer the oven method.
