Here are a couple of recipes for you to try and if you search here for: chicken apple yogurt you'll find a few more. Also, these recipes are very flexible so leave out or add ingredients as you like just adjusting the dressing more or less for the quantity. The addition of cooked chicken or turkey to any waldorf salad recipe would also be good.
Waldorf Chicken Salad
Combine: 2 c. cubed cooked chicken or turkey 1 lg. Granny Smith apple, cut bite size 2 celery stalks, cut diagonally 1 small green pepper, diced 1/2 sm. onion, diced 1 c. seedless red grapes, halved 1/2 c. walnuts, coarsely chopped 1 c. dark seedless raisins
Mix together dressing: 2/3 c. orange juice 1/2 c. plain yogurt 1/2 tsp. salt 1/8 tsp. nutmeg
Pour over salad mixture and toss to coat. Serves 4 Waldorf Chicken Salad
Combine: 2 c. cubed cooked chicken or turkey 1 c. chopped apple 1 c. halved red grapes 1/2 c. thinly sliced celery 1/2 c. raisins 2 tbsp. chopped walnuts
Mix together dressing: 1 (8 oz.) carton plain low fat yogurt 2 tbsp. honey 1/4 tsp. ginger
Pour over salad mixture and toss to coat. Makes 4 (1 1/4 cup) servings

CURRIED CHICKEN SALAD 2 1/2 c. white meat (chicken), chunked 2 Tbsp. apple, peeled and diced 2 Tbsp. lemon juice 2 c. grapes (red), halved and seeded or 1 c. red and 1 c. green 1 1/2 c. chopped celery 1 1/2 c. water chestnuts, sliced 3 Tbsp. green onions, tops and bottoms, chopped fine 3 Tbsp. parsley, chopped fine 1 Tbsp. chutney, chopped 1/2 c. mayonnaise 1/2 c. yogurt or sour cream 1 tsp. grated onion 2 Tbsp. curry powder salt and pepper to taste
Sprinkle apple with lemon juice and toss with chicken chunks. Add grapes, celery, water chestnuts, green onions, parsley and chutney. Mix together mayonnaise, yogurt, sour cream, grated onion, curry powder, salt and pepper. Add to fruit-chicken mixture. Toss lightly and chill. Serves 4.
