Hi Suzanne. Here is another date pinwheel cookie recipe, This is from the Mennonite community cook book.
Date Pinwheel cookies 1 cup shortening 2 cups brown sugar 1/2 cup granulated sugar 3 eggs 4 - 4-1/2 cups flour 1 tsp. salt 1 tsp. soda 1 tsp cinnamon Cream shortening and sugars together. Add eggs and beat untill fuffly. Sift flour. Measure and add salt, soda and spices. Sift again. Add sifted dry ingredients to creamed mixture, and beat untill smooth. Chill dough in refridgator for several hours. Devide dough chilled doug in 2 parts. Roll to 1/4 inch thickness and spread with the following filling. 1-1/2 cups ground dates or raisins 1 cup granulated sugar 1 cup water 1/2 cup chopped nuts Combine dates, sugar and water and cook untill thick, stirring occasionally. Remove from heat and add nuts. cool and spread on rolled peices of dough. Roll as jelly roll and chill thourghly in refridgerator. Slice in rings 1/8 inch thick and place 1 inch apart on greased cookie sheet. Bake at 375 untill a golden brown. Makes 3-1/2 doz. cookies.
