It's nice to hear from you. Here's a recipe that I haven't tried with sweet potatoes and mayo. Hopefully it's close to the one you're looking for.

Sweet Potato Pudding

3 cups grated sweet potatoes
2 cups milk
1 cup sugar
1/4 cup cornmeal
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. nutmeg
1/3 cup mayonnaise
2 eggs

Mix and pour in greased baking dish and bake for 30-40 minutes in preheated 400 degree oven. Serves 6-8.
