I have searched this site and have not found another recipe for shortbread cookies like this one. It's easy to make!
3/4c. sugar 1 1/2c. butter (use butter for best results) 3c. flour 1c. rice flour
Cream the butter and sugar. Add the flour one cup at a time. It will be very stiff. Knead the dough so that it's not crumbly, but sticks together. Using a jelly roll pan, or a cookie sheet with edges, spread the dough evenly using the palm of your hand until it is flat. Prick the dough using a fork several times. Sprinkle with a little colored sugar if desired. Bake at 325 for 20-35 minutes. Continue to check it; don't overcook it. Once the edges turn a light brwon it's done. Cut it into diamonds or squares while it's still hot. Hope you enjoy!
