RICOTTA COOKIES (SOFT COOKIE WITH ANISE OIL)

1/4# SOFTENED BUTTER
1/4 C. RICOTTA CHEESE
1 TSP. VANILLA
1 C. GRANULATED SUGAR
1 EGG
2 C. SIFTED FLOUR
1-1/2 TSP. BAKING POWDER
1/2 TSP. SALT
1/8 TSP ANISE OIL

BLEND RICOTTA WITH SOFTEN BUTTER UNTIL CREAMY; ADD VANILLA. ADD SUGAR, GRADUALLY BEATING UNTIL WELL-BLENDED. ADD EGGS AND MIX WELL. SLOWLY STIR IN DRY INGREDIENTS AND BLEND WELL.

DROP FROM TEASPOON ON GREASED BAKING SHEET. BAKE IN MODERATE OVEN - 350 DEG., 10 MIN. (COOKIES DO NOT BROWN -THEY REMAIN WHITE)

ICING/FROSTING: CONFECTIONER SUGAR WITH COLORING ADDED, IF WANT - THEN LIGHTLY DIPPED IN SUGAR SPRINKLES. MAKES APPX. 50+.
