Hi again Denise,
Here's another recipe that may be a possibility. This calls for loaf pans, but I bet you could bake it in a 9x13 or jelly roll pan (put any extra batter in muffin cups) by just adjusting the baking time.
Betsy
Oatmeal Nut Bread
2 eggs 1 cup sugar 2 cups buttermilk 2/3 cup dark molasses 3 cups flour 2 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 1/2 cups quick cooking rolled oats 1 1/2 cups chopped nuts 1 1/2 cups chopped dates
Preheat oven to 350 degrees. Grease two loaf pans. In a mixing bowl beat eggs until light; gradually add sugar, beating constantly. Blend in buttermilk and molasses. Sift together flour, baking soda, baking powder, and salt; gradually add to buttermilk mixture, beating only until blended. Stir in rolled oats, nuts and dates just enough to combine evenly.
Divide into pans. Bake 50 to 60 minutes. Turn out of pans onto wire rack to cool. Slices better on second day.
