For making regular-sized (not mini-minis) mini-muffins, just take ANY regular muffin recipe, and use the same baking temperature. But, the baking time will be almost 1/2 of what the large muffins take. For example, if a recipe says 20 minutes, expect the minis to take 10 minutes.
Extra spray the pans and the tops of the pan with canola oil spray. I like to fill my minis almost up to the top of the pan with batter because they'll really have big tops. Spraying the tops of the pans will prevent the edges of the muffin tops from sticking to the pan.Come and visit me In the Kitchen with Sarah, here at TKL.
