For making regular-sized (not mini-minis) mini-muffins, just take ANY regular muffin recipe, and use the same baking temperature. But, the baking time will be almost 1/2 of what the large muffins take. For example, if a recipe says 20 minutes, expect the minis to take 10 minutes.

Extra spray the pans and the tops of the pan with canola oil spray. I like to fill my minis almost up to the top of the pan with batter because they'll really have big tops.
