There is something called "Watergate Salad" or
"Thanksgiving Salad" that my daughter and I have
loved for years (we refer to it as "the green stuff".)
It's not a typical Ambrosia, but you may like it.
We make it like this:

1 - 12 oz. container Cool Whip
1 - small box instant pistachio pudding mix
1 cup miniature marshmallows
1 small can mandarin oranges, drained
1 - 12 oz. crushed pineapple, UNDRAINED
1/2 cup chopped pecans

Mix everything together and refrigerate for at least
2 hours before serving.

You can change the types of fruit, if you like.
I've seen canned fruit cocktail used instead of the
oranges and pineapple, and one recipe contains
shredded coconut.
