Hi Sage, Here is a vanilla pudding using cornstarch,

Vanilla Pudding
3-1/2 cups milk scalded in top of double boiler
3/4 cup sugar
1/3 cup carnstarch
1/2 cup milk
2 eggs seperated
1 tsp. vanilla
1 Tbsp butter

Scald milk, combine Sugar, cornstarch, the 1/2 cup milk and 2 egg yolks and slowly add to Hot milk and cook, stirring constantly till thickened. Add the vanilla and the butter. Beat egg whites and fold in last.
