Potato Pancakes
2 l/2 C. raw potato, coarsely shredded l/2 small onion, grated 1/3 C. flour l egg 1 tsp salt vegetable oil
In a med bowl stir with a fork all ingredients expect vegetable oil. Preheat fry pan on med heat. Spread 2 TBSP veg oil over bottom. Pour batter by 1/4 Cupful into hot frying pan. Make a few pancakes at a time, flatten with a pancake turner. Cook until browned and crisp on each side.
I like to serve these topped with applesauce.
