Hi Char;
Here's the recipe my Mom used, from the 1931 edition of The Household Searchlight Recipe book.
SEA FOAM
2 cups sugar
1/2 cup water
1 tsp. vanilla
2 egg whites
1/8 tsp. salt
1/8 tsp. cream of tartar
Combine sugar, water, salt and cream of tartar. Cover and boil 5 minutes. Uncover. Wipe sides of saucepan with a damp cloth. Boil without stirring to firm ball stage(245-248*) Pour slowly, beating constantly, over stiffly beaten egg whites. Add vanilla. continue beating until candy holds its shape when dropped from a spoon. Drop by teaspoonsful onto waxed paper. Sprinkle with colored coconut if desired.
