The closest I can find so far is an old recipe from my files. I don't know the source of the recipe and haven't tried it, but maybe it will give you a good base to start with.

Mincemeat Cake
1 box mincemeat 2 tsp. soda 2 cups boiling water 2 cups sugar 2 eggs, well beaten 3/4 cup cooking oil 1 cup pecans, chopped 2 1/2 cups flour
Lightly grease a 9" pan or a loaf pan. Preheat oven to 375 degrees F. Mix mincemeat and baking soda together. Pour boiling water over and let cool. Stir nuts and flour together. Stir together the beaten eggs, cooking oil and sugar and mix well. Add to mincemeat. Stir well. Stir in the nut and flour mixture. Bake at 375 degrees in 9 inch pan 45 minutes or 1 1/2 hours at 350 degrees in loaf pan.
