Easy Mex Chicken
6 chicken breasts 1 16 oz jar of salsa 1 can green chilis 1 can black beans( drained) 1 cup rice 1 cup of water maybe less depending on the thickness of your salsa Mix together in a longish casserole dish, cover with foil and bake at 350 for one hour. I usually figure one beast per person and it can easily be added on to. I would buy one of those huge tin foil pans at Walmart and make it in that. Hope this helps. For guests I would serve this with Mexican Ceasear very easily made larger. If you want that one I ll post it too. Maura
