Here is another lobster chowder I found. It is called Quick Lobster Chowder.
Quick Lobster Chowder
It is described as an easy to do soup meal.
Saute in a saucepan about 5 minutes. 1/4 cup finely diced onion 1/2 cup finely diced celery in 2 tablespoons butter Add 1 1/2 cups water 1 small bay leaf 1 package frozen mixed vegetable defrosted Cover and bring to a boil. Cook the vegetables until barely tender about 5 minutes. Remove the bay leaf. Drain but reserve the liquor from 1 can chopped broiled mushrooms 3 oz. Stir into the liquor until smooth 1 tablespoon cornstarch Add this to the mixture in the saucepan stirring constantly until it thickens. Add the drained mushrooms and 1 cup tomato sauce 2 cups milk 1 cup canned lobster Season to taste Heat slowly but do not boil. Serve with Crusty bread.
Makes about 8 cups
This is a very quick and easy recipe. I like other recipes Hobbs had better. But if you are in a hurry or want an easy recipe this will do.
