Pumpkin Grand Marnier Soup
4 T butter 1/2 C chopped white onion 1 16-0z can pumpkin 1/2 - 2/3 C Grand Marnier 1 1/2 C chicken broth 1/2 C orange juice 1/4 C brown sugar 1 to 2 C half & half
Melt butter in large saucepan & saute onion over medium heat until onion is soft, about 5 min. Stir in pumpkin, liqueur, chicken broth, orange juice, & brown sugar. Bring to a simmer while stirring. Reduce heat & continue simmering, uncovered for 15 min. Remove from heat & cool slightly. Puree soup in batches in blender or food processor until smooth. Return to saucepan & stir in half & half to desired consistency. Simmer for 5 - 10 minutes, stirring to avoid scorching. Ladle into warm bowls. Garnish with a dollop of sour cream & a sprinkle of orange peel. 6 - 8 servings
***NOTE: If made a day ahead, do not add half & half until ready to heat & serve.
