Trina, here is an apple stuffing with cornbread.... Cornbread and Apple Stuffing
Cornbread (for 6 guests) Ingredients: 1 1/4 cups all purpose flour - sifted 3/4 cup yellow cornmeal 2 - 4 Tbsp. Granulated sugar 4 1/2 tsp. Doubleacting baking powder 1 egg 2/3 cup milk 1/2 cup melted butter
1. Pre-heat oven to 450 degrees F. 2. Butter an 8" X 8" X 2" baking pan 3. Sift the flour, corn meal, sugar, baking powder & salt into a medium bowl. 4. In a small bowl, beat well the egg, add the milk, butter, stir well. Pour into the flour mixture. 5. Pour into the buttered pan and bake for 25-30 minutes.
To prepare the stuffing:
Ingredients: 1 pound Sausage, pre-cook and discard the fat, cooled and medium diced. 1 cup yellow onions, small dice 1 cup celery, small dice 2 Tbsp. Vegetable oil 2 each Granny Smith apples, cored and dice medium 1/4 cup fresh sage leaves, chopped To taste-salt To taste-white pepper
1. Sauté the onions and celery in the vegetable oil over high heat until translucent, add the sage.
2. Break up the cornbread into bite size pieces in a large bowl. Add the sautéed onion & celery mixture, the diced apples, diced sausage, and season with salt and pepper to taste.
3. Place in a buttered baking dish at 350 degrees for a good hour. Serve with a roasted Thanksgiving Turkey.
NOTES: If the stuffing needs moisture, you may add a little chicken stock. Additional ingredients you may use to add texture and taste: Pecans, Poached oysters, sun-dried cranberries, chestnuts, apricots.
