This is a really great, easy stew that you make in the oven. It's definitely "man food", full of lots of meat and potatoes. I've adapted this recipe from one found in the "Edwall Centennial Cookbook". Enjoy! Serves 4 to 6 6 - 8 potatoes, scrubbed, cut into cubes 1 pound hamburger or 1 pound stew meat 2 ribs celery, chopped 1 large onion, chopped 1 large bottle or 6-can pack of V8 Salt & Pepper To Taste Biscuits (serve with)
Preheat your oven to 375 F. Add potatoes, onions, celery and meat to the pot. Pour V8 over the top, stir to mix. Cover, place in oven and bake for 1 hour covered. Remove, take off cover, bake for 30 minutes longer. Stew should be bubbling. Stir, and serve in great big bowls with biscuits on the side.
