You don't say in your request but most people make lemon meringue pie with a cornstarch thickened filling, and cornstarch can be tricky. Here's a different lemon meringue pie that everyone raves about and it never fails:
1 can sweetened condensed milk 1/2 cup lemon juice grated rind of 1 lemon 2 egg yolks ==mix together and pour into crust (graham cracker crust is nice) Use the two egg whites for your meringue, sweetened with 2-3 Tbsp sugar. Bake at 325 for 15 min or until lightly browned.
