Mamey Mini Muffins

Mamey is a tropical fruit which has a hard brown outside covering, inside a very large hard dark
brown seed and the fruit part is soft mushy pink colored when ripe/overripe is like the consistency of
ripe bananas.

Ingredients:

2-3 med/large Mamey fruits
1 large egg
11/4 C sugar
1 stick of butter/margarine melted
1 1/2 cup regular flour
1/2 tsp. baking soda
1/2 tsp salt
1 tsp baking powder

If desired, you may add raisins, sprinkle of cinnamon, coconut, chopped nuts of any type.

Preheat oven to 350-375 degrees. Coat a small muffin pan with cooking spray.

Steps:

1. In a large bowl, mash the Mamey fruit, add the sugar, egg, and melted butter. Mix till blended.
Don't overmix.

2. In a separate bowl, mix the flour, soda, salt and baking powder until well blended.

3. Add the dry mix to the fruit mix. Stir until just blended. Do not overmix.

4. Pour mixture into muffin pans and bake. The muffins are done when they spring back or when a
knife or toothpick comes out clean. Let cool and then ENJOY!!
