FORGOTTEN COOKIES Categories: Cookies Yield: 36 servings
2 Egg Whites 1 pn Salt 1/4 c White Sugar 1 t Vanilla 1 c Chocolate Chips
Preheat oven to 325 degrees. Beat egg whites with the salt until foamy. Slowly add sugar, one tablespoonful at a time, beating after each addition until the meringue stands in stiff peaks. Stir in vanilla and fold in chocolate chips. Drop by teaspoonfuls on a lined baking sheet and place in preheated oven. After 2 minutes, turn off oven. Leave meringues in oven overnight. remove from pan and store in cookie tin lined with paper towel. Makes 3 dozen. -----------------------------------------
Lemon Meringue Kisses

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large egg whites -- room temperature pinch salt 2/3 cup sugar -- sifted 1 teaspoon lemon zest -- finely grated 1/4 teaspoon vanilla extract

Cover 2 baking sheets with parchment or foil.
Beat egg whites with salt til soft peaks form. Add sugar very slowly, beating we l between additions, til egg whites are stiff but not dry.
Fold in lemon zest and vanilla.
Drop by teaspoonfuls onto the baking sheets or pipe small kisses with a pastry b g fitted with a 1/2-inch star tip.
Bake til dry, but not brown, 40 to 45 minutes. Cool 2 to 3 minutes before removing from baking sheets.

2 Egg whites 3 pk Sweet and low 1 ts Vanilla 1/4 c Alba chocolate dry skim milk
Beat whites stiff gradually adding sweetener and vanilla. Carefully fold in ( dry ) milk. Drop by teaspoonful onto nonstick baking sheet. Bake 275 for 25 minutes or crisp.
