Here's a soup recipe previously shared that you might find similar to your Mother's. If you don't have time to prepared dried beans you can substitute canned beans (rinsed). As with most soup recipes the amounts of vegetables and seasonings can be adjusted to taste. Thanks Nalani for posting the recipe!
Recipe(tried): Ham Bean Soup

2 cups shredded ham and a ham hock
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion
1 #28 can tomatoes, chopped
1 1/2 quarts water
salt and pepper to taste
rosemary, thyme, and dry mustard to taste
2 cups beans (mixed or one kind) soaked overnight and drained
Cover ham with water. Cook 1/2 hour. Add the beans which have been soaked overnight and drained, the tomatoes, and other vegetables. Cook 2 1/2 hours. Season
Crock pot method: Rinse beans and put all ingredients in a crock pot. Cook on low 8 hours or until done.
