This is the version of Swiss Steak that I've been making for years:
1 lb. cubed steaks (4-6 pieces) 2-3 tbl. olive oil 1 large onion, sliced 1 large green bell pepper, sliced 1 8-oz can tomato sauce seasoned salt to taste (I use a homemade mixture of kosher salt, ground pepper, garlic powder and dried Italian herbs)
In heavy skillet, heat oil and brown the steaks. While browning, sprinkle meat with seasoning on both sides. Reduce heat to low and spread onions and peppers evenly over the meat. Pour tomato sauce over all, then cover and simmer for 30-45 minutes, until tender.
This is great served with white rice, green peas and hot rolls. You can also add parboiled potatoes before pouring on the sauce, if you like. I also like to add a few shots of hot sauce to perk everything up.
