dear Lu, I did not resist the challenge so this is
Mariangela's FAMOUS macaroni salad.
You need 500 grams (for 6 servings) of good italian pasta like fusilli or penne, cook it "molto al dente" (it means one or two minutes less than usual), add a tablespoon or two of good olive oil and let cool. In the meanwhile, roast two red peppers, peel them as they are brown, cut them in little squares and add olive oil, garlic, sliced, and some leaves of basil. Cut in little cubes an aubergine and cook in some oil for a few minutes. Halve some little tomatos (or cut them in slices, if tou like). Now add peppers, aubergines and tomatos to the pasta, add a little more garlic, basil, oil and oregano. If you like you may also add little cubes of cheese like mozzarella or (much more better!) some smoked cheese, like provolone. I hope this recipe will suite you. Ciao! Mariangela
