HAWAIIAN COFFEE Makes 4 servings
1 c. double strength coffee, chilled* 1/4 c. pineapple juice, chilled 1 Tbsp. sugar 1/2 pt. cherry vanilla ice cream 4 maraschino cherries with stems, drained
Combine coffee, juice, sugar and ice cream in medium bowl; beat with rotary beater just until smooth. Pour into 4 tall glasses; garnish each with cherry.
*Make coffee as usual but use 5 tablespoons coffee to 1 cup water.
