Here's an recipe from an old newsgroup posting for you. Also, you might want to try experimenting by replacing the Cheddar with Stilton in Broccoli-Cheddar Soup recipes (being cautious with salt and seasonings).

Broccoli and Stilton Soup
2 tablespoons. butter or margarine 1/4 cup minced onion 2 tablespoons plain flour 10 fl oz milk 20 fl oz unsalted chicken stock 8 oz Stilton cheese, crumbled 1 cup cooked broccoli freshly ground pepper Melt butter and gently sauté onion until it begins to soften. Stir in the flour, and then gradually stir in the milk and stock. Cook until onion is tender, stirring occasionally. Gradually add the Stilton and the broccoli and stir until blended. Season to taste (you won't need salt, as Stilton is very salty). You could use croutons on this. I'd try unbuttered popcorn.
