This is a simple, yet yummy, crock pot soup. My kids even love it. Hope it helps.
Crock Pot Vegetable Soup
1/2 C diced Carrots 1/2 C diced Onions 1/2 C diced Celery 1/2 C diced Potatoes 3 C Water 1 Can (14-15 ozs) diced Tomatoes 1/2 tsp Salt (optional) 1/2 tsp Pepper
Stir all ingredients into Crock Pot.
Place lid on and cook for 30 minutes on High, then simmer on Low for at least 30 minutes or until ready to eat.
Serve with toasted Wheat bread for a healthy lunch.
