Choc Chip--Date Cake
1 cup cut up dates
1 tsp baking soda
1 1/4 cup water
3/4 cup shortening
1 cup sugar
2 eggs
3 tsp cocoa
1 3/4 cup+2 TBLS flour
3/4 tsp baking soda
Combine dates, 1 tsp baking soda,and water and bring to boil. Set aside to cool slightly.
Cream shortening and sugar. Add eggs and cocoa mixing well. Add flour and 3/4 tsp baking soda. Add Date mixture and mix well. Put in 9 X 13 pan, that has been sprayed with non stick spray
Over batter sprinkle
1 cup choc chips
1/2 cup sugar
1/2 cup chopped nuts.
Bake at 350 degree for 30 mins.
This is a very moist cake. An easy cake as the frosting is built in.
