I have been making this dough for the last 7 years and there's never been a complaint!
From Reader's Digest "Quick and Delicious" Cookbook
2 envelopes of active dry yeast (or 2 Tbsp bulk) 1 Tbsp sugar 1 3/4 c lukewarm water (not hot or cold!!) 1/4 cup olive oil + a tsp( I have used veg and it's ok) 5-6 C unsifted all-purpose flour, divided 2 tsp salt1. disolve yeast & sugar in water , let stand until foamy about 10 mins.
2.Add 1/4 cup oil, 2 cups flour and salt to yeast, stir until well mixed. Add 2 - 3 cups of remaining flour kneading the dough until it comes away from the bowl and holds together.
3. On floured surface, knead dough adding flour if necessary (I find 5 cups total is usually sufficient)until smooth and elastic, about 5 mins. Shape into a ball. Coat the inside of a large bowl with the tsp of oil. Place dough in bowl and roll it aroung so all sides are coated in oil lightly. Cover the bowl with a clean towel; let rise in a warm place until doubled in size, about 1 hour. Make sure it doesn't catch a draft as this interfears with the rising.
4. Punch dough down break into eaqual size balls (makes 2 lg pizzas or you could break it down more to have mini individual ones). Shape into a ball and let rise again for 15 minutes.
5. Spread onto a greased pan, top with tomato sauce, hamburger, green onions, mushrooms, pepraroni, green onions, white onions, anchovies, pinapple, shrimp, ham, fresh tomato, feta chees, mozeralla cheese, cheddar cheese, what ever you like, go wild and have fun!
cook at 475F for about 15-20 minutes until centre is warm and crust is golden underneath.
You can cook the crusts without toppings, and freeze then just pull out as needed, top and bake. Crusts last in the freezer for about 3 months. I always throw half of the dough in a freezer bag and freeze it uncooked. Let it thaw for several hours before trying to spread it on the greased pan to use. I have never had this freezing method fail.
