Salmon Party Spread
1 (15 1/2 oz.) can salmon, drained 1 (8 oz.) pkg. cream cheese, softened 1 tbsp. lemon juice 1 tsp. onion, grated 1 tsp. prepared horseradish 1/2 cup walnuts, chopped 2 tbsp. snipped parsley Assorted crackers
Flake salmon, discarding skin and bones. In mixing bowl, stir together cream cheese, lemon juice, onion and horseradish. Add salmon; mix well. Chill thoroughly. Form salmon mixture into 8-inch long log. Combine walnuts and parsley; roll log in nuts. Cover and chill. Serve with assorted crackers.

smoked salmon spread Ingredients:
8 oz cream cheese, room temperature 2 Tbsp heavy cream (whipping cream) 4 oz smoked salmon, cut up 3 scallions (green onions), coarsley chopped
Directions:
Process the cream cheese and cream in a food processor or blender until smooth and creamy. Add the salmon and scallions and process until blended, but do not overprocess. (Mixture should contain recognizable pieces of salmon and scallions). Mixture may be refrigerated for up to a week. Spread the mixture on toasted mini bagels or serve with crackers. |
